10 Aug Veg Out: Fresh From the Garden Cocktails
TBH we didn’t know what we were getting ourselves into either, but after an afternoon of R&D, we are all. in. on vegetables in our cocktails. Try ’em for yourself with these simple swaps on classic recipes, and impress the crew at your next al fresco get together.
(And for all you sticklers, we know some of these veggies might ‘technically’ be considered fruits – just go with it, k? Whatever they are, they’re still delicious).
Because salad shouldn’t have all the fun – shake up the traditional gimlet with these leafy, peppery greens to kick up the herbal notes of your favorite gin.
- 2 oz gin
- ¾ oz fresh lime juice
- ½ oz simple syrup
- 1 cup baby arugula
Combine gin, fresh lime juice and simple syrup into shaker. Top with ice and 1 cup of arugula. Shake and strain through a fine filter. Garnish with a sprig of arugula. Serves 1.
Vodka + tomato usually means bloody mary, but we’re swapping out those heavy garnishes for a light, garden brunch-ready combo of sweet, earthy heirloom cherry tomatoes, strawberries and a spritz of lemon.
- 2 oz vodka
- 5 heirloom cherry tomatoes
- 2 large strawberries
- ½ oz simple syrup
- 1 lemon – squeezed
Slice heirloom tomatoes in half, dice two large strawberries and muddle together. Add to shaker with vodka, simple syrup, lemon juice and ice. Shake vigorously, and double strain into a coupe glass. Garnish with a tomato! Serves 1.
If you’ve ever been told you eat ‘too much’ avocado toast (not possible), this one’s for you. Double down on the healthy fats and fun (tequila!) with this rich but surprisingly refreshing marg.
- ½ avocado
- 2 oz tequila
- 1 oz triple sec
- 1 oz fresh squeezed lime juice (~2 full limes)
- 1 cup crushed ice
Peel and pit avocado, and muddle. Add all ingredients into a blender until smooth. Serve in salt-rimmed glasses with a lime garnish.
No blender? No problem – just add a little elbow grease to your muddling to get a more liquid consistency, toss all ingredients into a shaker (but with 1 ½ oz of tequila), shake for 20 seconds and double strain! Serves 1.
