The secret to a good meatball is partially roasting it in the oven and then braising it in your sauce. So after we roll out our Italian sausage meatballs made from super lean ground beef, parmesan, egg, breadcrumbs, rosemary, thyme, and marjoram, we stick those bad boys in the oven before letting them braise in Carbone’s Michelin-starred marinara sauce. Made fresh daily, served with Carbone sauce on top, and arrives cool with warming instructions.
We just love good Italian food, so we wanted to recreate the closest thing to your grandma’s Sunday gravy and meatballs right in our own kitchen. The result is four slow-cooked balls of herby, spicy, savory deliciousness—all about 3oz a piece (think nearly the size of a tennis ball!)—that cut super tenderly with a spoon.
