This isn't a This vs. That. More of a mini flight night. The traditional Negroni is made with equal parts Campari, Vermouth, and Gin that simply tastes like a sun-drenched Italian piazza. The recent version speaks to the rise of bitter cocktails, and swaps Vermouth with Amaro's original bouquet of grapes, herbs, roots, flowers, bark, and citrus. Both can please the right palate come cocktail hour, so here's both to provide options.
