The hype is real, and so is the taste. By itself it's a sublime experience that combines Sauvignon Blanc, Sylvaner, and Gewurtztraminer—each one foraged from a different vineyard. The Sylvaner was a direct press while the other two grapes spent three weeks on the skins (affecting the hue). Food pairings? Tacos, soft cheese, and oily fish are the move.
Skin contact. Varieties feremnted seperatly and blended at bottling. There was no fining, filtering, or SO2 added during any phase of winemaking.
