Founded by Senegal-native Pierre Thiam. Fonio is a tiny, nutritious, climate-smart ancient grain that has been prized across West Africa for over 5,000 years. It’s light, fluffy and just a bit nutty. Think cous-cous but better! Yolélé was founded in 2017 to create economic opportunity for smallholder farming communities; to support biodiverse, regenerative, and resilient food systems; and to share Africa’s ingredients and cuisines with the world.
One of Senegal’s most popular dishes, Yassa chicken is made with caramelized onions, limes, and chili’s. Inspired by that dish, Pierre’s Yassa Fonio Pilaf offers the comforting, earthy flavors of caramelized onions, smoky chili pepper heat, and brightness from the lime. Makes a great meal base for roasted chicken, grilled fish, or sautéed veggies.
